One of the most confusing aspects of wine is that two wines made from the same grape can taste completely different, even when they are grown in the same region! Just as paintings can be loosely classified on a scale from more abstract to more realistic regardless of subject, wines also tend to fall into a recognizable spectrum of style regardless of their grape or appellation. 

What wine professionals know that most wine drinkers don't is that the key factor is grape ripeness. Almost all of the sensory facets of wine are driven by sunlight and fruit ripeness, which makes it possible for us to group our wines loosely into broad categories based on how they taste. Best of all, these same sensory traits are the factors that govern how well any given wine will partner with food!

As vivacious as a Hollywood starlet, these wines can be sparkling, white or rosé, but always fall on the lighter and brighter end of the spectrum and never feature oaky flavors. These tangy wines of refreshment make ideal aperitifs and are remarkably versatile food partners.
