Description

Since apples were planted on Sonoma's Coast by Russian explorers in 1811, Sonoma's Sebastopol region has been world-famous for its perfect expression of the unique apple terroir. Born again in prominence, the apple is no longer the captive of Sonoma's wine world as winemakers are tempted by the forbidden fruits of nature to explore the titillating flavors of Sonoma apple cider. With a winemaker's pedigree and a Franco-American influence, Jean-Charles Boisset and Brian Maloney, winemaker at DeLoach Vineyards and Buena Vista Winery, united their winemaking know-how with curiosity for the apple terroir of Sonoma to create La Captive.

Winemaking
Vintage Notes: 

Made from 100% pressed Arkansas Blacks and Pippin apples, the fruit was fermented in cool, stainless steel with a mixture of yeast used to accentuate the natural perfume and delicacy of the cool climate orchards. A moderate sweetening, using juice from the orchards, provides balance to the bright acid of the Pippins and the tannic structure of the Arkansas Blacks. The result is an off-dry hard apple cider that is full of bright fruit forward flavors that leaves you wanting another sip.
